Varietals: 60% Chardonnay, 30% Chenin Blanc, 10% Pinot Noir
Tasting Notes: Crisp, clean and elegant, it has a lovely fragrant raspberry and red cherry nose underscored with an earthy hint of dried violet and fresh strawberry flavors on the palate. The core of Chardonnay and Chenin Blanc lend to a racy spine that delivers a citrus, just ripe stone-fruit center, that leaves your palate with a zesty finish. The inclusion of Pinot Noir, though only 10% of the total blend, adds all those red fruit aromas and flavors previously mentioned, along with the varietal's characteristic “finesse.”
The domain is located in the south of France, on the small village called 'La Digne d'Aval', less than 5 kilometres from Limoux, a stone’s throw away from the famous old city of Carcassonne, one hour from Toulouse and two hours from Montpellier. Since the years 80, the domain elaborate only sparkling wines in ‘’AOC’’ of Blanquette and Cremant de Limoux on 30 hectares. Year after year they have been consolidating their reputation of quality in France but also all over Europe, in the USA, Canada or Japan or Australia.
