Pairing: Craving green? This Sauvignon Blanc effortlessly pairs with a multitude of dishes (many quite difficult to pair) such as asparagus, fried artichokes, shrimp frittata, dumplings, shrimp scampi, scallops, fresh seafood/fried seafood, etc. A perfect opportunity to make dumplings!
About. Destiny was on Stefan Pratsch’s side, apparently. After viticultural school in Mistelbach, he spent time apprenticing in his parents’ traditional winemaking business, then took it over and gained popularity all over the world - most notably in the US and Scandinavia.
Organic farming had been a “thing” from the start, along with consistent efforts to produce fully mature grapes, keeping the young wines in contact with its lees as long as possible, and gentle extractions. Their fastidious nature in the vineyards have paid off well in the bottle; histamine levels are very low, thus easier to digest and pleasurable to drink! PS his wines are also vegan.
