The 2017 Savigny-lès-Beaune 1er Cru Aux Gravains is also showing well, exhibiting aromas of raspberries, currant leaf, spices and incense. Medium to full-bodied, fleshy and nicely concentrated, this lively Savigny has rounded out well with further élevage and a little time in bottle, and it surpasses the assessment I formed of its merits a year ago.
Pairing: Think rack of lamb with a herb crust, or seared duck breast particularly accented with red fruits like cherries or blackberries, mushroom stroganoff, and light umami-rich broths such as you find in sukiyaki. This Mushroom Stroganoff by Hetty McKinnon enjoyed with a glass of this Pinot Noir forms a heavenly comfort on a cold winter day. It takes less than 30 minutes to prepare, and will keep you satiated all night!
About: Aux Gravains is a Premier Cru climate of the Savigny-les-Beaune appellation in the Cote de Beaune sub-region of Burgundy. Its position on the south-facing slopes of the Bois Noel hill gives it an excellent terroir that is well suited to the Pinot Noir that is grown here.
